zipin Launches Fermented Wheat Flour for Clean Label and Enhanced Baking Quality

2026-08-26 - Leave me a message

zipin has recently introduced its Fermented Wheat Flour. Produced from wheat flour through enzymatic hydrolysis and saccharification, the starch is converted into fermentable sugars, which are then fermented by specifically selected food‑grade microorganisms. After deactivation, filtration, concentration, and spray drying, the final product is a stable, soluble powder. Rich in small‑molecule metabolites such as organic acids (acetic acid, lactic acid), bioactive peptides, and amino acids, it is suitable for bread, pastries, and various wheat‑based products to improve quality and shelf life.

Process and Functional Characteristics

The raw material, common wheat flour, undergoes enzymatic hydrolysis to convert starch into fermentable sugars. It is then fermented by selected microorganisms, producing a range of organic acids and flavour precursors. The fermented broth is deactivated, filtered, concentrated, and spray‑dried to obtain a powder with good heat stability and high solubility. The entire process uses no synthetic chemical additives, aligning with clean‑label trends.

The organic acids in the product effectively inhibit the growth of harmful bacteria and pathogens, extending shelf life. At the same time, the peptides and amino acids generated during fermentation enrich the taste profile, reducing the need for additional flavour enhancers. Available in different concentration levels, the product can be flexibly adapted to various recipes and processing methods.
