What is Curdlan?


Curdlan is a new type of microbial extracellular polysaccharide, also known as thermal gel because of its unique property of forming a gel under heating conditions. The Ministry of Health has promulgated and implemented the national standard for food additive Kederan gum in June 2012, which is now widely used in meat products, surimi products, rice and noodle products, bionic food and other food industries.
